roasted poblanos stuffed w/ pulled pork chili verde

a great recipe we found here via pinterest.

we did our pork chili in the crockpot.  we sautéd onions and garlic and then added them to the spices, salsa and liquid and then searing the pork on all sides in the same pan we prepared the onions and garlic and then tossing it in the crockpot.  our crockpot cooked it well in 2-3 hours on high.

once our dinner guests arrived, we stuffed the peppers and popped them in the oven.  we had lots of toppings to add individually – avocados, shallots, cilantro, sour cream, lime.  some ate the stuffed peppers alone, other wrapped them into a tortilla for a tasty burrito.

we’ll be eating the leftover chili today with eggs for brunch.  a very tasty and versatile recipe.
